Gomó?ki are dried balls of cottage cheese with yolks, herbs and spices. They may be oblong - in the shape of cheese forms - or round. They are light yellow with darker spots of spices. Their outer layer is drier than the inside. Consistency of gomó?ki is thick but not hard – they are easy to cut with a knife. They taste quite spicy, slightly salty, with a distinct flavour of mint, pepper and caraway – the taste of the cheese remains in the background. “Gomó?ki” are served in a marinade made with garlic and mint. Zygmunt Gloger (1845-1910), a famous Polish ethnographer, archaeologist and historian, included the entry “Gomó?ki” in his “Encyklopedia Staropolska” (Old Polish Encyclopaedia) (page 199), explaining that it is one of the most traditional styles to prepare cottage cheese in the shape of cheese forms.
