The meat of the istrian cattle is very appreciated in istrian gastronomy. The most popular ways of meat preparation is with gnocchi, meat soup, grill and cooked with cabbage. 
Often are served in the typical istrian taverns called "konoba".

Istrian cattle is also planned to be exploit for fresh meat. The meat would be vacuum-packed and then offered to the consumers. It would be offered to the market after construction of the building for meat choping/cuting in Istria County, vacuum-packing and maturation and putting it in working order. Also, the meat of istrian cattle would be offered from those restaurants and taverns who will pass through a special education for usage, preparation and serving the dishes from meat of Istrian cattle.
