Thick and dark red tomato juice made from fresh tomatoes pounded to a fine paste.
Owing to finely chopped flesh of tomatoes, the juice is thick and dark red (the colour depends largely on the type of tomatoes and their ripeness). It tastes sweet, sour and spicy, and smells of fresh tomatoes. The juice can be cooked in jars as winter stocks. In the past, many women in Silesia in summer and autumn laid in food supplies for their families to survive winter. They processed and preserved many types of fruit and vegetables, including tomatoes. It was very easy to process tomatoes into a juice and a paste. They did not lose too much of their vitamins and taste, and were used similarly as fresh tomatoes.
