The hedgehog cake belongs in the produce category called “Baking and confectionery products”. Directions: Step 1 – make sponge pastry, Step 2 – make solution for soaking the pastry, Step 3 – soak the cooled down sponge cake with the warm solution, Step 4 – make the cream mousse, Step 5 – cut out of the pastry 5 pieces shaped as a hedgehog and spread them with layers of cream mousse, Step 6 – make the spines of almonds and decorate the cake; Women from the Rural Housewives Association in Kazimierz present the hedgehog cake at displays, demonstrations and markets/fairs. They organise demonstrations of baking the cake, tasting shows and they popularise the baking recipes.
