?cierka is a kind of thick, floury soup, with little yellow flour-and-egg lumps visible. It is also known as ‘zacierka’ or ‘?cierana’. The dish consists of microscopic dumplings cooked in milk or in water. It is salty and sweet at the same time and has a characteristic milk soup flavour. The name ‘?cierka’ comes from the verbs ‘?ciera?, trze?, pociera?’ (“to wipe off, to grate, to rub”), that is from the activity of ”wiping off” eggs and flour by hand to form dough whose consistency resembles powder-like crumble. The soup, particularly popular with children, belongs to typical dishes served at the turn of the 20th century.
